Girl gets bestest gifts.
Christa just came home with an entire container of parmesan rinds, just the outer centimeter of the wheel, which I guess they cut off before grating the rest. That's the best part -- it's drier, which concentrates the flavor. And I am exceedingly pleased that girl remembers I like them. *love* :-)

Where does one get parmesan rinds? I tend to think of parmesan as either coming in a giant wedge or in artificial powdery stuff. I guess I've seen a few pre-grated containers in Whole Foods -- do they sell these out of the back, or something?

they were prepackaged in little containers in the cheese section of the cupertino whole foods. I've never seen them before today though. maybe they only just figured out that some people like them and they didn't have to just throw them out after grating the rest of the wheel :)

A parmesan rind is a great thing to add to homemade soup. It gives the broth extra creaminess and thickness. Fish the rind out before serving.
