I really think the "mac n cheese-sauce" effect was more than just too much milk - it was also too much roux. It completely destroyed all the stretchiness in the cheese. Mac-n-cheese should make strings when you pick up a fork-full. At least that's my not-so-humble opinion!
The spice mix we went with was totally fabulous though. And the cooked but still slightly crunchy onions were perfect.
